Leatherwood honey comes from the leatherwood tree, which grows wild only in the cool, ancient rainforests of western Tasmania. That narrow origin is why it's rare and why it tastes like nothing else — bold and aromatic, floral and slightly spicy, with a lingering perfume.
R. Stephens is Tasmania's oldest and largest leatherwood producer, started by Robert Stephens in 1920 and still based at Mole Creek. The hives sit deep in remote, unfarmed forest — which is exactly why the honey is certified organic. It's raw: untreated and unpasteurized.
